Good master, let us go to that house, for the linen looks white, and smells of lavender, and I long to lie in a pair of sheets that smell so.
— Izaak Walton, 1682

Tour des Abbés is a small-scale lavender farm within the grounds of The Abbot’s Tower. Lavender is well known for its fresh smell which is both calming and uplifting.

All our lavender is cut by hand and hung to dry naturally in an open drying store. The bunches are hung upside down to keep the bloom and in the dark to preserve the colour.

The lavenders are all edible varieties, ( including Hidcote, Imperial Gem and Peter Pan and others) which are used in many products including conserves, honey, tea, culinary sea salt, beauty products and soap.
